Masala Chai
Ingredients:
Makes 1 mug of chai
180ml water
180ml milk or your favourite milk substitute (avoid almond milk as it splits)
1/2 teaspoon PAPA’S CHAI spice blend (add more if you like it a little spicier)
1 tablespoons sugar (or to taste)
1 teabag OR 1 teaspoon black loose leaf tea (Assam or Darjeeling work well)
Brewing instructions:
Place water in a small saucepan and turn on high heat.
Add 1/2 teaspoon of PAPA’S CHAI spice blend.
Add the contents of 1 black teabags or 1 teaspoon of loose leaf tea and whisk together.
Add 1 tablespoon of sugar (or to taste) and bring to boil.
Once boiling reduce to low heat and simmer for a couple of minutes.
Add 180ml milk or your favourite milk substitute (avoid almond milk).
Bring to boil and simmer for a couple of minutes until the milk rises, then take off heat and repeat once more. Ideally, let the milk rise and fall a couple of times.
Strain with a fine mesh sieve.
Enjoy a fresh cup of PAPA’S CHAI.
